Spinach and Black Bean Lasagna
1 package frozen chopped spinach
15oz. Part Skim Ricotta Cheese
2 cans Black Beans (drained, rinsed, and mashed)
1 large jar spaghetti sauce (any type)
1 box lasagna noodles
1 egg
Tony's to taste
16 oz. shredded mozzarella
16 oz. shredded pepper jack (or mozzarella)
Preheat over to 350.
Blend the beans and spaghetti sauce. Combine the ricotta cheese, spinach, egg, and Tony's- mix until blended.
Layer the bottom of a 9x13 pan with a layer of the bean mixture and top with cheese. Place a layer of unboiled lasagna noodles and top with the ricotta cheese mixture and a layer of shredded cheese. Add another layer of lasagna noodles and top with bean/ sauce mix and top with cheese. Bake for one hour at 350.
